Deep Fried Prawns (in batter).
Serves: 18 - 20 prawns
Preparation time: about 15 minutes.
Ingredients:
- 1 kg Pacific prawns
- 4 egg
- 2 teaspoon salt
- 12 tablespoons plain flour
- 8 tablespoons water
- Oil for frying
Dip:
Salt and freshly ground black pepper or crushed sesame seeds, mixed together.
Method / Instructions:
- Shell the prawns but leave the tail on to be used as a handle.
- Make the batter by beating the egg first, then fold in the salt, flour and water. Beat for 1 minute to incorporate some air.
- Heat the oil in a deep fryer until really hot, dip each prawn in the batter then deep fry individually for 2 minutes or until golden, remove and drain on kitchen paper.
- Serve with salt and pepper or crushed sesame seeds as a dip.
