Fusilli with Coriander Pesto Sauce.
This green pesto sauce is prepared from coriander and walnuts. A little parsley is added to the sauce for flavor.
Serves 4
Time: Preparation time 20 - 25 minutes.
Ingredients:
- 2 ½ cups fusilli or any pasta
- 2 tbsp butter
- 3/4 cup milk
PESTO SAUCE:
- 2 flakes garlic
- 3 tbsp chopped walnuts
- ½ tsp salt
- 1 cup chopped fresh coriander
- 1 tbsp chopped fresh parsley
- 3 tbsp olive all or any other cooking oil
- 3 tbsp finely grated cheese (any of your choice)
Method / Instructions:
- To prepare the pesto, in a grinder or blender, combine garlic, walnuts, salt coriander, parsley, oil and cheese. Blend until very finely chopped, do not make it into a smooth pasta by grinding for a longer time.
- Bring a large saucepan of salted water to a boil, add pasta and cook until done. Drain pasta.
- Melt 2 tbsp butter on fire. Add pasta and toss well. Sprinkle some salt on the pasta and mix well.
- At serving time, mix milk with pesto in a large pan and boil. Simmer for 1 minute.
- Add pasta to the pesto sauce, toss well and serve.
