Hummus is one of the most well known Middle Eastern recipes and is served as part of the mezze table and eaten with hot pitta bread.
Serving for 2 - 3 persons
Time: 20 - 30 minutes
Ingredients:
- 150 g chick-peas, soaked overnight
- 2 cloves garlic, crushed
- 1 teaspoon salt
- freshly ground black pepper
- 6 tablespoons tahini
- juice of 2 lemons
- olive oil
- paprika
- chopped parsley
Method / Instructions:
- Discard the soaking water, and cover the chick-peas with fresh water. Bring to the boil and boil briskly for at least 10 minutes, then simmer for 1 1/2 hours until the chick-peas are tender.
- Drain and rinse the chick-peas. Reserve a few for garnish, then pound the remainder in a mortar and pestle or purée in a processor to make a smooth paste.
- Work in the garlic, salt, pepper, tahini and lemon juice, adding a little water if the paste is too thick. Season to taste.
- Place the hummus in a serving bowl and smooth down.
- Pour a little oil in the center, and garnish with the reserved chick-peas and a sprinkling of paprika and parsley.
